Three Bean Chicken Soup

This is your soup — you really can’t go wrong with it…use the below instructions as a loose guide. If you want to add rice at the end, do that. If you’re not into onions, don’t add any in! If you like shredded chicken over pan fried, do you boo! Have fun with it and if you think it could be better or you want to change things the next time around, you do that girlfriend.

Steps:

  • Cut up veggies and add to pot

    • I bought some that were already washed and semi cut as they were affordable and make things go faster - thanks Nugget Market

    • Add a little olive oil to bottom of soup pot before adding veggies

    • Cook for a few minutes over medium heat - till a bit soft.The only way you mess this up is if they are overcooked (burned) or barely cooked - don’t overthink it

  • While the veggies are cooking, put the chicken on — a little olive oil at the bottom of the pan, chicken in (no need to wash), season chicken with the above seasoning - don’t overthink it, you can always add more

    • For chicken, cook for a few mins on medium heat, cook for a few mins on one side, then flip and a few mins on the other side — then I flip it back and forth a couple times, pending what side needs a little more

    • If you’re unsure when chicken is done, that’s Ok — you want to make sure there is no pink translucent/jelly like look — see the video for reference

  • Once the veggies are done, add in beans, broth, bay leaf, keep at simmer till you add chicken

  • Once chicken is done, cut it up and add to soup, turn heat to high and bring to a boil

  • Once at a boil, turn to a simmer and simmer for at least 20 mins…it’s ok if it sits a little longer

  • Towards the end of the simmer, option to add in the chard (cut in strips, I used rainbow chard), squeeze half or whole lemon, dill (tsp or so)

  • Scoop yourself a bowl, add avocado or even a little cheese

  • Enjoy, you deserve to!

  • Save the rest in the fridge for the next day…
